Strawberry Soup...Forever! Huzzah!


It's probably the easiest dessert you will ever make. And it's snappy (yum), fresh (yum), and also a take of one of my mom's go-to desserts. (She didn't make the soup, but we dipped these delightful beauties into cream and brown sugar). What's not to like....

As for Strawberry Soup (JL thinks he invented it..) Bah! (Love you, 'oney). Recipe below!


Jean-Luc’s Strawberry Soup

Prep time: 10 minutes
Serves 4
Great for: summer, when you’re pressed to come up with a quick dessert
Wine suggestion: A Banyuls


4 cups fresh strawberries, washed, stems cut
1 1/2 cups crème fraîche or sour cream
2 teaspoons vanilla extract
1/2 cup brown sugar

Place ingredients in a food processor or blender. Pulse, mixing until creamy. Chill in the refrigerator for at least half an hour. Serve in bowls.

My thoughts? Garnish with a bit a fresh basil. Or rosemary. Add a shot of rum. (YAZZZ!) Then, lick the bowl.
