Prep time: 20 minutes
Serves 4-6
Great for: summer or an accompaniment for
seafood dishes like
shrimp or served with tortilla chips
2 avocados, peeled and diced
2 tomatoes, diced
1/4 red onion, finely minced
1 mango, diced
1 handful flat parsley or cilantro,
finely chopped
1/2 jalapeño pepper, seeded and minced
1 lime, juiced
Freshly ground black pepper, to taste
Mix all the ingredients in a bowl. Chill in the refrigerator
for about a half an hour, or until ready to serve. Serve with tortilla chips or
as an accompaniment to a seafood dish like Jean-Luc’s Flambéed Pastis Shrimp.
